These Orange Berry Muffins are bursting with citrusy flavor and juicy berries. They are made with whole wheat flour and oats, sweetened with coconut sugar, and are oil-free. Perfect for a healthy and delicious breakfast or snack!
Ingredients:
- 2 cups whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup coconut sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup non-dairy milk such as almond or soy milk
- 1/4 cup freshly squeezed orange juice
- Zest of 1 orange
- 1 cup mixed berries such as blueberries, raspberries, or strawberries
- 1 tablespoon apple cider vinegar
Instructions:
Preheat the oven to 375F 190C
In a large bowl, mix together the whole wheat flour, rolled oats, coconut sugar, baking powder, baking soda, and salt
In a separate bowl, whisk together the non-dairy milk, orange juice, orange zest, and apple cider vinegar
Pour the wet ingredients into the dry ingredients and stir until just combined
Gently fold in the mixed berries
Spoon the batter into a muffin tin lined with paper liners, filling each about 3/4 full
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
