A hearty and comforting soup made with dried navy beans and flavorful ham, cooked low and slow in a crock pot.
Ingredients:
- 1 lb dried navy beans
- 1 ham hock or ham bone
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 6 cups chicken broth
- 1 bay leaf
- Salt and pepper to taste
Instructions:
Rinse and sort through the dried navy beans, removing any debris
In a slow cooker, combine navy beans, ham hock or bone, chopped onion, minced garlic, diced carrots, diced celery, chicken broth, bay leaf, salt, and pepper
Cover and cook on low for 8-10 hours or high for 4-6 hours, or until beans are tender and soup is flavorful
Once cooked, remove the ham hock or bone from the soup
Remove any meat from the bone, shred it, and return it to the soup
Adjust seasoning with salt and pepper if necessary
Serve hot and enjoy!
