Keto Pulled Pork Mac and Cheese



Indulge in the melt-in-your-mouth goodness of this keto pulled pork mac and cheese. A comforting low-carb twist on a classic favorite.

Ingredients:

  • 2 cups cooked pulled pork
  • 4 cups cauliflower florets
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

Preheat your oven to 375F 190C

Steam the cauliflower florets until tender

Drain and set aside

In a saucepan, heat the heavy cream over medium heat until it simmers

Reduce the heat to low

Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth

Add the garlic powder, salt, and pepper

Adjust the seasoning to taste

In a baking dish, combine the cooked pulled pork and steamed cauliflower

Pour the cheese sauce over the pork and cauliflower, ensuring an even coating

Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly

Remove from the oven, garnish with chopped fresh parsley, and serve
