Slow Cooker Corned Beef Tacos



These Slow Cooker Corned Beef Tacos are a delicious twist on traditional tacos, featuring tender, flavorful corned beef brisket slow-cooked to perfection and served with classic taco toppings. Perfect for an easy weeknight dinner or St. Patrick's Day celebration!

Ingredients:

  • 3 lbs corned beef brisket
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • 1 tablespoon mustard
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 12 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions:

Place sliced onions and minced garlic at the bottom of the slow cooker

Place the corned beef brisket on top of the onions and garlic

In a bowl, mix beef broth, brown sugar, mustard, black pepper, and paprika

Pour over the corned beef

Cover and cook on low for 8-10 hours or until beef is tender

Remove corned beef from the slow cooker and shred using two forks

Heat corn tortillas on a skillet until warm and slightly charred

Assemble tacos by placing shredded corned beef on tortillas, then top with shredded cabbage, cheddar cheese, sour cream, and cilantro

Serve with lime wedges for squeezing over tacos
