Ingredients:
- 8 oz penne pasta
- 2 chicken breasts, cooked and diced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, sliced
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions, then drain and rinse with cold water
In a large bowl, combine cooked pasta, diced chicken, cherry tomatoes, Kalamata olives, cucumber, red onion, feta cheese, and parsley
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper
